Banana, Walnut and Fruit Loaf
Here's a delicious recipe from one of our volunteers, Anne.
Ingredients
- 4oz wholemeal flour
- 4oz self-raising flour
- 1 tsp baking powder
- ½ tsp mixed spice
- 4 oz butter
- 2 medium eggs (beaten)
- 2 very ripe bananas (about 9-10 oz)
- 2 oz chopped walnuts
- 4 oz mixed dried fruit
- 2 oz caster sugar
Method
- Set the oven to 180 degrees.
- Grease a 1½ lb loaf tin (and line).
- Mix the flours, baking powder and spice.
- Rub in the butter, then add the sugar.
- In a separate bowl, whisk the mashed banana and the eggs until frothy.
- Add the rubbed-in flour mixture, the dried fruit and the walnuts and combine.
- Put the mixture into the lined loaf tin and bake for 35 to 40 minutes till risen and golden.
- Test with a skewer. It is ready when the skewer comes out clean.
- Leave it in the tin for five minutes, then turn it out and cool it on a wire rack.
