Banana, Walnut and Fruit Loaf

Here's a delicious recipe from one of our volunteers, Anne.

Ingredients

  • 4oz wholemeal flour
  • 4oz self-raising flour
  • 1 tsp baking powder
  • ½ tsp mixed spice
  • 4 oz butter
  • 2 medium eggs (beaten)
  • 2 very ripe bananas (about 9-10 oz)
  • 2 oz chopped walnuts
  • 4 oz mixed dried fruit
  • 2 oz caster sugar

Method

  1. Set the oven to 180 degrees.
  2. Grease a 1½ lb loaf tin (and line).
  3. Mix the flours, baking powder and spice.
  4. Rub in the butter, then add the sugar.
  5. In a separate bowl, whisk the mashed banana and the eggs until frothy.
  6. Add the rubbed-in flour mixture, the dried fruit and the walnuts and combine.
  7. Put the mixture into the lined loaf tin and bake for 35 to 40 minutes till risen and golden.
  8. Test with a skewer. It is ready when the skewer comes out clean.
  9. Leave it in the tin for five minutes, then turn it out and cool it on a wire rack.
