Derek's Home Made Bread

This quick and easy healthy recipe appeared in our first ever Friends' Newsletter in Spring 2002. It has wholemeal flour as a main ingredient. This is the type of flour which you can get from the Mill on Open Days in return for a donation.
Wholemeal Bread
Ingredients:
- 1lb wholemeal flour
- 1 teaspoon salt
- ½oz yeast
- ½pt warm water
Method:
Pre-heat the oven to 450°, Gas mark 8.
- Cream yeast with a little of the water, then add rest of water.
- Stir together flour and salt in a bowl, add the creamed yeast, and mix to a pliable dough. (Use a drop or two of tepid water if necessary).
- Knead for about ten minutes.
- Place on floured board - knead lightly.
- Put into a warmed, greased/floured tin - leave in a warm area covered by a thick cloth.
- When the dough has risen to the top of the tin, it will be ready for baking.
- Place in a hot part of the oven for 15 minutes, then gradually lower the heat.
- Cook until the bottom of the loaf sounds hollow (approx ½ hour).
Brown Bread
Simple brown bread can be made as above but using ⅓ wholemeal flour and ⅔ white flour.
